This is one of those recipes that you would not think of but when you have been shown it, BINGO. Johns Garlic Rice is named after an old school friend who perfected the way of doing the least amount possible!! This dish has an amazing flavour an aroma that sets a prelude for the meal itself. I always serve this as a side dish but add a little meat or vegetables to the mix and you have a main dish. Served with Indian Butter Chicken,  Chilli Chicken or Teriyaki Chicken. These chicken dishes have the strength of flavour that go so well with the rice. I put in quite a bot of garlic but you can tone it down to how you like it. Enjoy.

  • Heat the margarine in a large skillet and saute the garlic and rice, stirring constantly, until lightly brown.
  • Add the chicken broth, salt, and pepper and stir. Bring to a boil, then reduce heat to simmer, cover, and cook for 20 minutes.
  • This recipe yields 8 servings.
