Seafood Quiche
Ingredients
- 2 tbsp shallots finely chopped
- 3 tbsp unsalted butter
- 1 cup shrimp or lobster, crab or combination cooked,
- 3 large eggs
- 1 cup milk cream
- 8 inch pastry shell
- 1/4 cup Gruyere cheese grated
- ground black pepper
- salt
Instructions
- Cook the shallots in the butter over moderate heat until they are tender but not browned.2 tbsp shallots, 3 tbsp unsalted butter
- Add the seafood and continue cooking for 2 minutes, stirring frequently.1 cup shrimp
- Add the salt, pepper and cook for an additional minute.ground black pepper, salt
- Remove from the heat and allow to cool a little.
- Beat the eggs and the milk/cream together in a bowl and add the seafood mixture, stirring to combine well.3 large eggs, 1 cup milk

- Bake in a preheated 375F (190C) for 25 to 30 minutes, until the quiche is puffed and brown.
