  • In a large mixing bowl, combine the ground beef and pork. Add the sliced red chilli and season with salt and pepper, then mix well to incorporate the seasoning evenly throughout the meat mixture.
    500 g ground beef, 250 g ground pork, 1 large red chilli, 1 tsp salt, 1/2 tsp black pepper
  • Divide the meat mixture into four equal portions and shape them into burger patties, ensuring they are slightly larger in diameter than the baps as they will shrink when cooked.
  • Preheat your grill or a large skillet over medium-high heat. Once hot, place the burger patties on the grill or skillet and cook for about 4-5 minutes on each side, or until they reach your desired level of doneness.
  • Add the bacon to the burger pan and cook at the same time turning frequently until the bacon has crisped enough for you.

  • While the burgers are cooking, prepare the portabella mushroom caps by brushing them lightly with olive oil and seasoning with salt and pepper. Grill or pan-fry the mushroom caps for about 3-4 minutes on each side, until they are tender and slightly caramelized.

  • In the last few minutes of cooking, place a slice of cheese on top of each burger patty and allow it to melt slightly.

Notes

You can serve the red chilli with or without seeds, depending on your preference.
I use cheddar cheese most often but brie, gouda, Monterey are all perfect substitutes.
