For the Filling

  • In a mixing bowl, add the “filling” ingredients and gently mix well using two wooden spatulas.
    1 medium red onion, 4 large plum tomatoes, 12 large olives, 2 tsp mustard, 1 large red bell pepper, 1/3 medium cucumber
  • Taste and add salt and/or pepper if needed.

  • Place a frying pan/skillet over a medium heat and add a drop of olive oil. When hot add a wrap/tortilla to warm up but not cook. When little brown spots start to appear that’s enough.
  • Repeat with the other tortillas.
  • Place the four wraps/tortillas on a flat surface and spoon a quarter of the mascarpone cheese over each one being carefully not to tear them. The warmth will make the mascarpone cheese gooey.
    300 g mascarpone, 4 large Flour tortillas
  • Add a quarter of the lettuce to each one and then spoon a quarter of the filling across the middle of each wrap.

  • Fold the two opposite sides of the wraps slightly over the filling and then tightly roll the wraps starting an one of the open sides. You are wanting to make a large cigar/sausage shape.
  • Wrap the wraps/tortillas in foil to keep warm.
  • When ready to serve, use a very sharp knife to slice through the foil and the wraps and serve. They can be reheated gently in the oven in the foil for a few minutes or served cold.
