Fiesta Pasta Soup is two meals in one. Its a soup but with body to make it warming and filling. I use smoked sausage in my recipe but any sausage will do. The entire dish is so full of flavour with chillies, cilantro and black beans and more creating a soup that is ideal for hefty appetites.

Fiesta Pasta Soup
A filling soup with added vermicelli for body, texture and heat.

Ingredients
- 6 oz Vermicelli
- 30 oz chicken broth can
- 15 oz garlic chicken broth
- 2 cups water
- 10 oz tomatoes and green chilies canned and drain
- 2 tbsp cilantro minced
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 lb smoked sausage
- 14 oz corn drained
- 14 oz black beans rinsed and drained
- 1 Tbs lime juice
Instructions
- Combine broths, water, tomatoes, cilantro, chili powder and cumin in a Dutch oven; bring to a boil. Cover, reduce heat and simmer 10 minutes.
- Cut the sausage in half lengthwise then thinly slice. Add meat, pasta, corn, and black beans to broth; cover and simmer 10-12 minutes or until pasta is cooked. Stir in lime juice.
- Ladle into bowls. Garnish each serving with minced fresh cilantro, thinly sliced avocado and grated cheddar or Monterrey Jack cheese.
