Simple Smartie Cookies are a treat my children love. They are quick to make, colourful and gone in minutes!! This American recipe is served as a cookie for dessert or just as a snack they go down so well. My children have loved these cookies and now so do my grandchildren, both helping and eating.

Ingredients
- 132 g Smarties 4x38g tubes
- 1 large eggs free range beaten
- 350 g plain flour
- 1 tsp bicarbonate of soda
- 1 tsp baking powder
- 250 g unsalted butter soft
- 300 g caster sugar
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 180C/355F/Gas Mark 4
- Sieve the dry ingredients, bicarb of soda, pinch of salt, flour into a mixing bowl and stir to combine.
- In a separate mixing bowl, combine the sugar and the soft butter and mash together to create almost a paste.
- Add the free-range egg and the vanilla and whisk into the sugar/butter mix.
- Slowly add the dry ingredient mixture whisking/stirring constantly to create a malleable dough.
- Using your hands, divide the dough into 20 evenly sized balls.
- Place the balls onto 2 baking trays leaving space between the as they do spread a lot as they cook.
- Add a few smarties to each ball. You may slightly flatten the cookies doing this but its ok.
- Add to the preheated oven for 15 minutes until the cookies have spread and are now golden brown.
- Remove from the oven and leave to cool for a few minutes on the tray so the bases are sticky.
- Transfer to wire racks and allow to cool fully.
