Chilies are available fresh, dried (either whole, flaked or ground into chili powder), or in an oil. They can also be made into consumables such as Tabasco Sauce.
Fresh chilies sold in packets in supermarkets usually have a heat scale on them as a guide. Don’t forget, the casing has flavour and a bit of heat but the seeds inside pack the punch. So many recipes from so many countries include chilies. These include Kao Pad, Spiced Scrambled Eggs, Linguine with Sardines Fennel and Capers and Pork Stir Fry Noodles.
They are a simple ingredient that can add heat and additional flavour to a dish right up to used as a balance against the richness of chocolate.
