To saute is to cook an ingredient quickly in a little hot fat. This is a wonderful fast method to cook an ingredient. It differs from frying due to the amount of fat being used. This method is often used to sear a piece of meat prior to cooking. This helps to seal in the flavour and juices and is used in dishes such as Beef Wellington or Lamb Curry J’s Special. You can also sauté vegetables to cook them fast and full of flavour. Examples are Sautéed Sweet Peppers, Sautéed Mushrooms and even Sautéed Broccoli – Broccoli Saltati. Also this method of cooking to provide a lovely clean dish with little fat content.
